Asam Pedas

Ini asam pedas versi senang (AKA versi malas) :):);P


2 keping ikan jenahak (ikan lain pun boleh)

3 biji bawang merah, ditumbuk
2-3 camb cili mesin
2 camb asam jawa, ambil airnya
2 cawan air
2 kuntum bunga kantan, dibelah empat
segenggam daun kesum
garam
gula

- panaskan 2camb minyak masak
- tumis kan bawang sehingga agak garing
- masukkan cili mesin, kacau beberapa minit
- tuangkan air asam jawa dan air
- biar mendidih
- masukkan bunga kantan, biarkan beberapa minit
- masukkan daun kesum
- akhir sekali, masukkan ikan
- biar mendidih 5-10minit
- perasakan dgn garam dan sedikit gula.

Mee Sup

This is very simple. My hubby and kids love this. Actually they love anything simple, especially with clear soup.

500 gm yellow mee/ noodles

1 onions, sliced
2 garlic, crushed
1 tbsp oyster sauce
1 chicken breast (sliced thinly)
10 medium sized prawns
3 cups water
1 tsp cornflour (optional-if u want it to be thick)

baby corn
carrots
sawi
button mushrooms
sweet pea

salt
white pepper

garnish
- bawang goreng
- daun bwg
- daun sup
- cili merah

methods:

- saute onion and garlic ( sampai agak garing)
- add in oyster sauce, chicken and water.let boil.
- add prawns and vegetables
- flavour with salt n pepper
before serve, add noodle
- best eaten with 'cili jeruk'

Kek Marble Susu


First saw this at Ezura's, then again at Mat Gebu's...
Original recipe is from chef Norzailina Nordin.

Anyway, I should change the name from marble cake to tiger cake...:)



Bahan-Bahannya :-)

250 g mentega (nak sedap guna mentega berkualiti tinggi)
230 g gula halus
2 camca teh ovallate
4 biji telur gred A
270 g tepung halus*
1 camca teh baking powder*(*disatukan dan diayak)
60 g susu pekat manis
2 camca besar serbuk koko
2 camca besar susu cair
1 camca teh coklat emulco

Cara membuatnya :-)
  1. Pukul mentega, ovallate dan gula halus hingga putih. Masukkan telur satu persatu sambil terus memutar hingga kembang dan gula hancur. Masukkan susu pekat dan gaul rata.
  2. Perlahankan speed dan masukkan tepung sedikit demi sedikit hingga habis, gaul rata. Bahagi adunan kepada 2 bahagian yang sama banyak. Satu dibiarkan tanpa warna dan satu bahagian di campur dengan susu cair, serbuk koko dan coklat emulco. Gaul hingga sebati.
  3. Tuang secara berselang seli antara adunan tanpa warna dan adunan coklat dalam tin yang telah dilenser dengan mentega dan dasarnya dialas dengan kertas minyak. Kemudian buat beberapa pusingan dengan menggunakan chopstick.
  4. Bakar dalam oven yang telah dipanaskan pada suhu 175C selama 30 - 35 minit. Sejukkan 5 minit sebelum dikeluarkan dari tin. Sejukkan sepenuhnya atas jaringan dan hias ikut suka..

Masak Lemak Terung

I learnt this from my late mother-in-law. It was something new for me. May be this is the east coast way of making it.


Recipes:

1 ikan kembung/selayang, direbus, ambil isi
1 terung panjang, dipotong
3 ulas bawang merah
1 camt lada hitam
santan dari sebiji kelapa
asam keping
cili hijau/ cili padi
garam

- tumbuk bawang merah dan lada hitam, tumbuk sekali isi ikan dan garam
- masukkan ke dlm periuk
- tambahkan santan
- masak sehingga santan menggelegak
- masukkan terung,asam keping dan cili
- masak sehingga terung lembut.

Masak Taucu Ikan Kembung




I cook this dish only when my parents come to visit. One thing is that my hubby and the kids doesn't like it (and doesn't want to even try it). Another thing is that it is not fun eating it all by yourself.

the recipe:


4 ekor ikan kembung, kelar2 kan, lumur dgn garam kunyit, goreng

2 ulas bawang putih, hiris halus
1 inch halia, hiris
4-5 camb taucu
2 keping asam keping
1 biji bawang besar, belah 4
5 biji cili hijau, belah jgn putus


- tumis bawang putih dan halia
- masukkan taucu, kacau sebentar
- masukkan 2 cawan air, biar mendidih
- tambahkan asam keping, bawang besar dan cili hijau
- masukkan ikan, sedikit garam
- selepas 10minit, siap.

Rolled Chicken Sandwich



My hubby bought this chicken sandwich slices.
I made the usual chicken sandwich with bread, lettuce, tomatoes, cucumber, etc, but umar doesn't like it.
So, I rolled it in bread.



6 Chicken sandwich slices (can use chicken bologna or the likes)
6 bread
2 eggs, beat
breadcrumbs
flour mix with little water to make a thick paste


-roll the bread flat using a rolling pin (to avoid oil from seeping thru while deepfrying)
-lay chicken slices on the bread and roll tight, use the flour paste as glue, at the end
-dip in egg
-roll in breadcrumbs
-deep fry until golden
-serve with chilli sauce..

Air Asam Pekat


Air asam ni berbeza skt dgn air asam biasa sbb separuh bahan2nya dikisar, menjadikannya lebih pekat.

Air Asam Istimewa


1 biji tomato
1 biji bawang besar
10 biji cili padi
belacan sedikit
segenggam asam jawa
gula
garam

cara menyediakannya:
- sediakan air asam jawa yg pekat, masukkan dlm blender bersama belacan
- potong dua tomato, sebelah masukkan dlm blender, bakinya dipotong dadu
- bawang besar juga dipotong dua, sebelah dipotong dadu, baki dimasukkan dlm blender
- cili padi juga dibahagi dua, 5 biji dihiris halus
- kesar hingga halus, perasakan dgn garam dan gula. tuang dlm mangkuk
- gaul dgn tomato, bawang besar dan cili yg dipotong


Dalam gambar- ikan siakap digoreng (malas nk bakar :)) dan ayam goreng berempah.

Spaghetti Bolognese


The kids and the daddy just love pasta, especially beef bolognese. I learn to cook this almost 7 years ago.

Pasta of any shapes (amount vary according to no. of people)

8-10 ripe tomatoes (make sure its ripe-u don't want to end up with very sour dish)
500gm beef, minced
olive oil
1 large onion, chopped
6 garlic, chopped
1 tbsp tomato puree
1/2 tsp dried basil (optional)
1 tsp dried oregano
button mushrooms (sliced thinly)
carrot, diced
celery, diced
salt
sugar
pepper

Method:
- cut an 'X' shape at the bottom skin layer only of all tomatoes. Pour boiling water until covering all the tomatoes. Leave 1-2 minutes. the skin will easily come off at this stage. Just peel it off. Chopped the tomatoes.
- Heat 3 tbsp olive oil, saute onion and garlic until soft.
- add in minced beef. Fry until well cooked (not red bits)
- pour in the tomatoes. Leave to cook in with slow fire until little juice left. (about 30 minutes-depends of the amount of juice from the tomatoes)
- add tomato puree, basil and oregano. Stir well.
- add vegetables at this stage
- Leave to cook, make sure it has reduce, so that we get a thick sauce.
- season with salt, sugar and pepper.

- while the sauce is cooking, boil water, add in some salt and oil.
- boil the pasta until al dente. toss...

- serve with a good amount of grated parmesan and a sprinkle of extra virgin olive oil...

Nasi Daging

Love this...
If u r looking for something different from the usual 'nasi minyak', then this it is.



1 kg daging, potong besar2
1 inci halia, diketuk
4 cwn beras basmathi (beras biasa pun boleh)-basuh dan sejat

2 camb minyak masak utk menumis (minyak sapi pun boleh)
2 biji bawang besar, hiris nipis2
1 btg kulit kayu manis
3 kuntum bunga cengkih
1 kuntum bunga lawang
2 biji buah pelaga
2 camb tomato puree @ 2biji tomato dicincang
1 peket rempah kurma, dijadikan pes
3 biji ubi kentang, potong 8, goreng sekejap
garam
gula
lada sulah

Hiasan:
daun sup & daun bwg, hiris (my family prefer coriander)
bawang goreng
cili merah dilhiris halus


cara membuatnya:

- daging direbus bsama halia, sehingga empuk.
- panaskan minyak, tumis bwg besar sehingga layu.
- masukkan kulit kayu manis, buah pelaga, bunga cengkih dan bunga lawang.
- bila naik bau, masukkan tomato puree.
- (jika menggunakan buah tomato, masak sehingga agak2 kering air daripada tomato tersebut)
- masukkan per kurma, kacau hingga naik bau
- masukkan beras, kacau
- masukkan air secukupnya (lebih kurang 6 cawan) atau mengikut jenis beras yg digunakan
- perasakan dgn garam, gula dan lada sulah
- masukkan daging
- kecilkan api, tutup periuk (kalau guna periuk nasi, boleh pindah kan ke rice cooker)
- nk masukkan daun pandan pun boleh jugak, bg wangi..
- bila halfway cook, kacau perlahan2, masukkan kentang.

-siap utk dihidangkan.
-tabur daun sup, daun bwg, bwg grg(or coriander) dan cili merah
- sesuai dihidang dgn dalca dan sambal/ air asam


There's a story behind this. A few years back ( about 3 years ago), my Mr AB wanted me to cook 'Nasi Daging'. I am familiar with nasi biryani, nasi minyak, nasi hujan panas, but not nasi daging. I search here and there, but couldn't find the right recipe.
So, he described that the rice should have this and that...and voila...I 'created' this recipe. I have improvised here and there. Have been making this lots of times since the last three years.
Anyway, if any of u have ideas to improvise it, pls do.

Spongy Cake

I was bloghopping as usual yesterday, and found this wonderful recipe at elisa's place.
It looks so yummy and yet simple enough for me to bake. It's my first cake after almost 3 months of morning sickness.
Anyway, my parents came to visit yesterday, so I baked this for them. I didn't put any topping, since they love their cakes plain. But I'm sure it taste great with whipped cream. n some fruits...
and yes..it's so soft, n spongy...chiffon-like.

I just copy paste the recipe--

Spongy Cake

Ingredients
4 eggs, seperated
1 cup castor sugar
1/3 cup water (or milk)
1 teaspoon vanilla
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt

Method
Pre-heat oven to 180deg C (350 deg F).
Line baking tray with ungreased parchment paper or greased waxed paper.
Beat egg whites till stiff.
Beat together egg yolks and sugar till creamy and pale yellow.
Beat in water and vanilla.
Sift flour, baking powder and salt, then gradually beat into yolk mix.
Carefully fold in egg whites till well mixed.
Pour into baking tray (spread evenly to edges if making a flat sheet cake).
Bake for 12 to 15 minutes (up to 20 minutes if making a thick round cake), or until cake is firm to the touch or toothpick comes out clean.

Mee Bandung


Have wanted to make this since last 2 weeks. Looking its beautifully captured photo in Mat Gebu's kitchen, makes my mouth water. :) Its origin from kak pah's kitchen. Thanks kak pah and Mat...
At long last, managed to make some.
Here's the original recipe, I just copy and paste...


Bahan Kuah:-

100 g udang (I used udang galah)
100 g daging
5 batang crab stick (tak letak)
2 biji telur
2 camca besar cili kisar
1 camca besar sos cili
1 camca besar tomato puree
1 camca besar sos tomato
2 camca bear sos tiram
2 camca besar kicap cair
1 biji bawang besar, belah 4
4 biji bawang merah kecil*
2 ulas bawang putih*(*dikisar halus)
1 kiub pati ayam "MAGGI"(i skip this)
Garam, gula dan lada sulah
1 batang lobak merah, potong kecil*
1 1/2 cawan potongan bunga kobis*
15 tangkai snow peas, dikerat dua*
1 biji tomato, belah 4*(*sayur)
Air secukupnya
Minyak untuk menumis

Bahan Lain:-
Mee kuning, cuci dan celur, toskan
Tauhu goreng, hiris nipis
Bawang goreng
Hirisan daun bawang/daun sup
Cili merah, dihiris+kicap cair+perahan lemon (lada kicap)

Cara membuatnya:-
  1. UNTUK KUAH:-Bersihkan udang, hiris daging nipis dan kerat 2 crab stick. Panaskan minyak dalam periuk, tumis bawang kisar dan cili kisar hingga wangi. Masukkan tomato puree, sos tomato, sos tiram dan sos cili, kacau rata. Masukkan belahan bawang besar, masak sebentar dan tuang kicap cair. Masukkan daging (kalau guna) dan tuang sedikit air, biar daging empuk, baru dimasukkan udang dan crab stik. Tuang air dan biar mendidih, masukkan semua sayur dan juga kiub pati ayam, perasakan dengan garam, serbuk lada sulah dan sedikit gula (jika perlu). Akhir sekali pecahkan telur satu persatu dan perlahankan api. Biar telur masak dengan api perlahan. Bila telur masak, boleh matikan api.
  2. PENYEDIAAN MEE:- Ambil mee yang dicelur tadi dan masukkan ke dalam mangkuk, tuang kuah dgn isi2nya serta sebiji telur tadi. Hias dgn hirisan tauhu, bawang goreng dan hirisan daun sup/daun bawang. Hidangkan bersama lada kicap...

Popiah Goreng


This is my simple 'popiah goreng'.

5-6 medium-sized prawns, peeled, cubed

1 garlic, sliced thinly
1 shallots, sliced thinly
1/2 cup julienned carrots
1/2 cup 'taugeh'
'kucai'
1/2 cup julienned 'sengkuang'

popiah skins

***
-saute garlic and shallots until soft.
-add in prawns
-when cooked, add all the vegetables.
-cook for 1-2 minutes.
-add salt n white pepper accordingly.
-leave to cool

- peel one layer of popiah skin
-spoon one tablespoonful of the vege mixture into one corner of the skin.
-roll up.
-stick the end with some water.
-deep fry until golden color.
-serve with chilli sauce.

Masak Lemak Cili Api Ikan Jenahak

I always love 'gulai lemak cili api'. I just love anything that have bird's eye chillies in it.
Here goes the recipe.


2 large slices of 'ikan jenahak'

pound together-
-3 red onions
-2 inches turmeric
-1 lemongrass
-5-10 bird's eye chillies

2 slices 'asam keping'
1 bowl coconut milk

Methods:
-put everything together in a pot.
-cook over low heat, stir from time to time.
-add salt

Ayam goreng Berempah

I got this from sis Jun's blog. I've used to make this type of fried chicken, but usually, i just pound the coriander and jintan. But blending them, makes it much better.


1 kiub pati ayam (chicken stock cube)
2 tbsp coriander seeds
1 tsp jintan manis
1 lemongrass
1 inch ginger

-blend everything together
-marinate chicken
-deep fry

Wholemeal / White Bread


I cooked fish curry for lunch. And every time we had curry for meal, my son have to have it with bread.
Being too lazy to make a trip to the nearest groceries store, so I baked one.
I got the recipe from some online recipe site, make some changes, and voila…bread for the family.
Even though the recipe said ‘white bread’, mine was brownish… ☺ ..I used whole meal bread flour instead of the regular high-protein flour…. Need me to remind us all of the 2007 resolution??-eat healthily, add more fiber in our diet. ☺
I halved the recipe, baked only one loaf.

White Bread

INGREDIENTS

* 2 cups warm water (45 degrees C)
* 1/4 cup white sugar
* 1 1/2 tablespoons active dry yeast
* 1 1/2 teaspoons salt
* 1/4 cup vegetable oil
* 6 cups bread flour

DIRECTIONS

1. In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam. (about 10minutes)
2. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
3. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
4. Bake at 175 degrees C for 30 minutes.

Prune Steam Cake


After the first try, I already been making them 4 times...very nice. I adjusted the recipe a bit, to make it less sweet. I just love it, a bit different from the usual butter cake and tasty.
Just don't omit the ovalette, as it makes it really fluffy compare to the non-ovelette version.

the recipe: ( I omitted the condensed milk, used 3/4cup sugar, and did not used the 'hirisan prunes' )
KEK PRUNE KUKUS LEEN

Bahan-bahannya
250 g butter
2 cawan tepung naik sendiri
1 cawan gula
1/4 tin besar susu pekat manis (kalau guna tin kecil 1/3 pun cukup)
20 biji prune (kisar dengan sedikit air lebih kurang 2 camca besar air, setakat boleh kisar dah cukup)
5 biji prune (hiris kasar)
5 biji telur
1 sudu teh ovallette

Cara :
1. Didihkan air dalam pengukus.
2. Putarkan butter/gula/susu sehingga sebati.
3. Masukkan telur satu per satu dan putar lagi.
4. Masukkan ovallette dan putar lagi
4. Masukkan prune yg telah dikisar dan putar lagi
5. Masukkan tepung sedikit demi sedikit dan kacau hingga sebati.
6. Akhir sekali masukkan prune yg dihiris kasar dan kacau dengan senduk sudah memadai.
7. Griskan loyang dengan butter dan alaskan dengan kertas minyak, tuang adunan ke dalam loyang dan kukus selama 1 1/2 jam.
8. Kalau nak bagi cantik, letakkan beberapa biji prune di atas adunan sebelum dikukus sebagai hiasan.

Mee Hailam


I cooked this a few months back (remember, I am unable to cook anything this month :)). And since the photo is still in my iPhoto collection, might as well post it here today.
Got the recipe a few years back from an internet site, could not remember which.
Do give it a try. Quite different than the usual dark 'mee hailam'.


1/2 kg yellow mee/ noodle
3 garlic, crushed

2 tbsp cornflour
2 tbsp oyster sauce
1 tbsp concentrated chicken stock
2 ½ cup water
100 gm beef
100 gm chicken
10 medium-sized prawns
2 squids
1/2 carrot, sliced
1 sawi, cut into inches
4 young corns
5 button mushrooms, sliced
4 bird eyes chillies
1/2 tsp ground white pepper
salt
sugar

Saute garlic in 3 tablespoon oil.
Add in cornflour, stir for a while.
Add in water, oyster sauce, chicken stock, let boil.
Then add in beef, chicken, prawns and squids.
Put in salt, sugar, pepper as taste...then vegetables.
After about a minute or two, add noodles in.
Serve immediately.
